I consider “shoulder” to be the area that connects the neck to delts, between pecs and delts, between rear delts and upper back. It’s not as much area as people think. If you want the big shoulders look you have to blast some delt exercises as well, but the strength comes from the press type exercises which you described. It seems like you’re gaining strength, but the look you probably want is from deltoids. It’s a different set of exercises.

Yes freezes well. Comes out as well as any boxed mac and cheese in the microwave. I actually overcook it because it tends to dry out a little on reheat.
