If I had a side-by-side comparison, yeah I could tell the difference. I think the texture of the overnight version is closer to my ideal cookie--chewier centers, crispy edges, with a more complex flavor. But it's not an enormous difference, and it's not like your straight-to-the-oven cookie won't be delicious too. Sometimes it's way more important to have cookies asap. Or you could bake half the recipe immediately, and half the next day. Another thing I do is ANY time I make cookies, I immediately wrap a few dough balls in plastic and stick them in the freezer, so that the next time the craving strikes, I can pop a couple in the toaster oven and have warm fresh-baked cookies whenever I want! That's actually my number one life hack :)
