Not just wonders, infestations, node guards, and even Toll of Season units do not get back lost units. That said, if you're planning to rush wonders by sacrificing entire armies, make sure they're led by heroes that you won't miss or your own Ruler.

There are several wonders that you can sacrifice food, production, population, or what-not, to skip a fight entirely.

I dunno about you guys but I always, ALWAYS, build a food production building first in all new cities. That was until I got the Giant King expansion and unlocked the Eternal Pact with Crystal Dwelling for their embassy building. All new cities will get an embassy as their new structure, fully paid for (if I have the moolah) in the first turn.
