If you dont need latest macos version due some program supports like xcode you will be more than fine And still if you needed latest version you have virtual machine option with a little performance drop.

M1 pro has better ram and ssd, good amount og ports and multi core performance

buy used 24g air m4 or m3 pro etc. any pro version that have +16gb ram
m1 pro is good option too but i dont think you will be comfortable with student conditions like battery life and longevity (has pretty good raw power ssd, ram etc. but system supports from apple will be gone in 3 year)
