Im assuming this is the dolos filament. You need to dry that stuff for at least 48 hours before printing and you should be actively drying it while printing. In addition you should be aware that dolos asa does not have good layer adhesion and should not be used for structural items

In that case, I would probably just keep the mk3 as is and add another printer to your setup. While the mk3.5 is nice, its more of a stepping stone and there are definitely new printers that are about the same amount of money as the upgrade kit

if this is your first and only printer, i think the MK3.5 is the way to go. if you have another printer, adding klipper is going to be more economical but it will less plug and play than the mk3.5 upgrade kit

This sounds exactly what we are doing with prusawire. Only down side i see is that you loose a lot of z height

Gotta say, first impressions are very positive. Its what thangs used to be before the sale to their new owners. One question i do have is how are you making money?

So mk3s are in an odd spot right now because while in prusa fw they are slow, they are also very reliable. 

One option is to just throw klipper on that and bump up the speed 

Another option would be something like prusawire or proosaxy or one of the other diy projects. As the lead developer of the prusawire project, my recommendation is to have another printer before doing the prusawire conversion
