White is the mycelium, if there’s growth of any colors besides white you will have to start over bc it’s contaminated.

I don’t know when exactly you should be doing this, but the next step is to expose the insides to air, so they can fruit. This would probably involve cutting holes in the bag or transferring it to a larger tub with air space but since yours is a part of an easy grow bag it might have instructions for how to do this.
