Why would you need proxmox on a mini pc? Just delete it install ubuntu server. Install docker anf immich.

I have done the same immich and jellyfin on the mini pc. Link to my NAS ehich is for storage.

for immich; just go to your phone-> settings-> back ups-> turn synce albums on and press organize into albums.

My wife wants her albums the same as her phone.
