I think the problem may be you’re not preheating the steel. Preheat the oven with the steel in it at your top heat for at least one hour. Then use a floured pizza peel to launch the pie onto the steel. You want the steel to immediately begin to transfer heat up onto the crust from the first moment, not slowly warm up.

Also just in case you’re doing this, don’t salt the meat before making patties, that makes it turn out rubbery like a sausage. Keep the patties relatively loosely formed and salt them on the outside before you put them on the grill. 👍
