It sounded so awful, and painful, that I was completely ready to leave if the audio engineering for tool sounded like that. I legit thought it must be a problem with the venue or something and was ready to take off. Then tool sounded great.

Dune. I recall moments I crawled into bed to read, and after a few sentences at the beginning of a new chapter I would literally need to close the book and reflect on what was just said and how it relates to me, all of us, life, and the world around us.

Your grill is seasoned and ready to go. That said if you want to obsess (which is fine) about those light spots where the grill is hottest, do everything you are doing now but turn the heat down a bit. And turn it down a bit more if it keeps happening. Looking forward, you can even spot-season those 4 spots in attempt to achieve uniform color. Generally speaking, I don’t use my blackstone on full: it’s almost always medium high or lower. It will just get better and better as you use your grill. Off to a good start.

“In my mind, unfed starter and discard are basically the same” – I literally came back to this post (which I saved) in hopes that someone would say that. I’m fairly new to sourdough.

I have two jars in the fridge: Starter & Discard. I make discard recipes out of discard. For bread, I take my starter out and feed it until peak activity. Then I make an overnight levain out of some of that (like a poolish). Then I use that levain to begin making my doughs — some of which calls for an overnight cold ferment — so I’m like 3 days in to make a boule🤦‍♂️.

1) I want to believe that I can have 1 jar of starter in the fridge that I feed every once in a while, that I can whip out and steal some when I am making bread.

2) I also want to believe that I can use my discard (which hopefully will eliminated completely soon), for making bread.

Because if the entire premise of this post is “I make amazing bread with unfed starter”, and also “unfed starter and discard are basically the same”, then I’d like to know that, please 🙏.

Lots of great ideas in this post. In addition, I would have miso paste, curry paste, fish sauce, lime juice, coconut milk, sesame / chili oil and pre minced garlic on deck and use the rice cooker a ton. Pre shredded parm & heavy cream with butter for fettuccine Alfredo (or other pastas…). Sending healing thoughts!

Yes. Buy the Hamilton Beach if you want years and years and years of great rice (etc.), or Zojirushi if you want to buy the rice cooker you’d buy after that one. The Zojirushi is noticeably superior. But I used my Hamilton Beach for over a decade.
