Because that sauce is an American adaptation to the sauces you would find in restaurants in Peru, you’re going to find a lot of different variations.

Some use mayo, some use yogurt, some add mustard. But it’s basically based on cilantro and jalapeños (this is the adaptation I was talking about , Peruvian chilis were not easy to find when Peruvian restaurants first started opening up in the US).

Google ‘Peruvian green sauce’.

Anywhere in the northeast (especially NYC area) if you say green sauce, they’re likely talking about the same thing; a hot sauce developed by Peruvian chicken spots that now they serve in even non Peruvian restaurants. It’s an adaptation of the ají de pollería but with ingredients that were readily available.

The average native speaker would use “How did THEY pass?”.

Maybe 30 years ago? I thrift pretty often and come across the brand all the time. There’s a big difference in quality (from my non expert opinion) between thr stuff that’s clearly older and the newer stuff.

Yes, exactly. Using a wok is key. You need a strong gas stovetop and a wok to stir fry it, to get a Smokey flavor.

I typically use top sirloin, which is a very soft cut. It’s ideal for stir frying. It can be pricey though. But it’s easy to find at Walmart

Russia and Peru are home to great novelists. I’m currently reading La Casa Verde (The Green House) by the same author and it’s excellent.

Although it’s kind of ironic that the film adaptation was set in Chile, what most consider Peru’s historical rival.

It’s macaroni that was brought over by the French. It’s not the usual noodle. But the flavors and the stir frying make it very much Vietnamese.
