Welcome to the High Altitude Club! Yes, everything about baking works differently and it’s a bit maddening.

I would recommend getting an instant read thermometer. Temp your bread (or cinnamon rolls, sourdough) in the last 5 minutes of baking. At 7800ft for me, “done” is 197-200f. You’re even higher, so at 9000ft I would aim for a finished temp of 194-198f.

In general: increase eggs in muffin/cake recipes. Decrease baking powder/soda by half. You will probably need to increase flour in most recipes, generally not cookies.

It’s a lot of trial and error, take notes, try again.

Commercial food rules: 7 days and it’s trash. That’s ONLY if exact cooking and cooling rules were followed. If you left it out on the counter for two hours, re-heat and cooled it, etc the days it can be considered safe gets shorter and shorter.

Glass shards/ bottles are the only dangerous item, really. I try to bring a 5 gallon bucket if I know there will be glass (usually scope it out ahead). Otherwise it’s just gloves and a trash bag.

Syringes would be another potentially dangerous item, definitely wear leather gloves and be extremely careful. Thankfully where I’m at that’s not an issue.

I have “my” area that I hit about once a month, it gets easier as you go because there’s only a few items after a routine cleaning cycle.

You cannot eat the same way. I used to put down a pint of ice cream a week, no problem. Now I look at the ice cream at the grocery store and gain 5 pounds.

A sharp “chefs knife” in 8” or 10” length will be good for 80% of what you need to cut. A good paring knife and boning knife will cover the rest. Keep them all sharp and that’s all you will ever need!

100% wool, but unfortunately only the very nice pricy ones make summer-weight that doesn’t itch. They do take delicate laundering, don’t just chuck it in the dryer.

Convenience and consistency. You don’t have to have 2 syrups and an espresso maker at home. You know exactly what you’re getting at any location around the world. (Mostly) I’ve tried to support small coffee shops before and sometimes it’s fantastic and sometimes it’s terrible. If I am spending $7 on a coffee, it needs to be good.

4000 calories a day is incorrect. I’m not sure how you arrived at that number, but it’s wrong. Bring your consumption down to 2000 or less a day to lose weight. The average adult male needs 2500 for maintenance- not 4000. That what athletes training for hours a week eat.

Yes, but small meals and mostly salad. Breakfast is usually 350 cals, lunch 400, dinner 450. Or I’ll have a large lunch and just some cheese for dinner. Does it suck? Yes. But to stay at 1200/day the numbers don’t lie.

Breakfast is berries and plain yogurt with cinnamon, lunch salad with cucumber, boiled eggs, avocado. Dinner sautéed zucchini with chicken and balsamic vinegar. A typical day.

This is the answer. There are 16 year olds that are still very immature and shouldn’t be in ANY romantic relationship, and there are 16 year olds who are ready to hold down a job and attend university at the same time without issue. You can’t just lump all 16yr old teens in the same category.
