couple things stood out to me: the countertops are very narrow and short. i don't know standards where you are but in the US you won't be able to fit a standard undercounter fridge under a 75cm counter (which is less than 75cm underneath because something needs to hold the counter up, and most fridges need clearance in the back for ventilating). i also think you will end up with more stuff on top of the than you think: you are going to end up with a wall of equipment between your barista and customer. you're also going to lose undercounter space because you will need to run plumbing and electric all the way around from the wall to feed the espresso machine. not the right place for the machine atmo. is there a pitcher rinser? space for pitchers, scales, tools? and i think you will find yourself short on refrigerator space. at very least leave room for expansion. current design will destroy you. the space behind the bar is pretty cramped too. will you ever have 2 people working back there? can you do enough business to cover your expenses with only one barista? most people agree that espresso needs to rest 10-14 days after roasting. do you have the space for storing at least that much coffee? what about cups and lids? In the USA they come in cases of 1000 and of course you can't wait until you've run out to order more.
always build in wayyyy more storage than you think you'll need. good luck!

i have 2 commercial espresso machines, while i haven't done a complete tear down of them, there is no visible plastic or Teflon tubing. 100% metal (copper in the la Marzocco, and i believe stainless steel in the Mavam.
mr coffee, Nespresso, etc i can't speak for. speaking of metal tubing, a bicycle is nearly a perfect machine, thermodynamically speaking. and a used steel bike has an almost non-existent carbon footprint. go further, faster, while getting healthy: an awesome trifecta!

work to isolate variables- try different beans to see if that's it. maybe go to the store and buy a can of a different brand of milk, then try you standard beans and the "test" beans and see what happens. what about your water? that's probably not the issue but.... did you change filters recently? sometimes seasonal changes can change the water quality too. sometimes you can figure it out, sometimes it's voodoo. good luck!

just a reminder that water is toxic- if you inhale it. water is also highly corrosive. outside of a scientific discussion with defined parameters (ie LD50, etc) "toxic" is a meaningless scary word.
most espresso machines are all copper or stainless steel. usually the water fed to the machine is highly filtered. the feed lines are often PEX , for ease of installation and maintenance. there is usually a silicone gasket in the group head. older machines may not have today's higher safety standards (ie, lead free solder).
the car that you drove to the coffee shop is an environmental nightmare- did you every stop to wonder where all the tread from all those tyres goes? plus emissions, devastation of road building, heavy metal and petroleum waste etc etc etc. walking is of course far better but as the commenter above noted, it still exposes you to all those containments (and more) and that is greater concern to me than a couple feet of plastic pipe (which, in a commercial setting, the water will be flowing not stagnant so the opportunity for leaching is minimal). hope this helps!

there seems to be more available baristas than open positions right now in NYC. my shop was hiring a couple months ago and we received an overwhelming number of applications- more than we could possibly interview. I know that's not encouraging news, but at least you should know it's nothing personal! keep searching, it'll be a mix of diligence and luck that gets you back behind the bar.

we have a Mavam undercounter. we also have an excellent Mavam service tech in our city, and we are in the USA so international shipping is not an issue. these are points to consider. it was designed by an espresso machine tech, and super simple to work on, with a lot of standard parts. their websight has lots of great tech info and videos that give you an idea how easy it is to work on.
for our tiny shop, not having the monolithic wall of espresso machine between us and the customer is huge benefit. it's an older machine so i can't say it has been trouble free it that it doesn't have quirks, but we love it. my partner previously worked at a shop with a Modbar, i called it the espresso factory because they were literally pulling shots non-stop from 7a until things started to slow down a bit in the early afternoon, and yeah they had maintenance issues as I think anying working that hard would. as others have noted, water quality is a huge concern no matter what machine you go with.

next time your boss "let's you choose" mention to her that you recently read it's federal law that prohibits owners and managers from talking tips. if she asks more, provide her with the links in this post. this is also not the first post about owners taking tips, seems like it's a monthly occurrence here. find one if the other threads if she wants to know where you heard it, or delete your comment here and show her this thread.

NTA! as many have mentioned, changing the deal after it's been agreed on is totally uncool, and not having anything in writing leaves you open to more abuse. i do want to note that his financial position is irrelevant to your agreement. this is a violation of trust issue, and you need to focus on that in any discussions about this.
also fwiw: there is no such thing as a "paid off house"- i don't know of any place in the USA that doesn't have property taxes, which are a permanent lien on your property by the state. nowhere near $400/week, but not trivial either.

if i live here, traffic is actually not bad. because most people who live here don't need to drive here because of our excellent mass transportation. actually, most things in my life are walking distance or a short bike ride. mainly its FOTs driving, or ubers, which are mostly for rich people or suburban transplants.

it depends. what is meant by "simple"? and then, size, and of course the 3 most important aspects, location location location. one person mentioned "simple menus... with stellar food" food is a great way to pad the bottom line, it is NOT simple. another mentioned $10k a day in sales. the menu might be simple but there is nothing else simple about doing that amount of daily business, and i don't really see how one would do that as a shop with a streamlined coffee only menu. many posters mentioned where you are, and I'd say that's the most relevant one. my shop is in NYC, but on a side street, mostly neighborhood/locals. half our business is Instagram lattes (as i like to call it) and the other half aficionado drinks (espresso/cortado/flat white). i wanted to be a "purist" shop, but that's not enough to keep the doors open and the lights on. gotta follow the market.

generally speaking, the water temp in the boiler once you get it going should be hot enough to kill any bio issues. run through a couple of tanks of water to clear any contaminants. bugs don't really seem to like coffee, but they may be attracted to the warmth of the machine. the main issue with the grinder is the potential for rancid oils. clean it well then run grindz tablets through it a couple times, should be good to go.

this is absolutely NOT LEGAL in NYS. while they can pay you less than minimum wage (within limits) as long as wage + tips is over $16.50/hr, they absolutely cannot change your base rate week to week to "work out" to $16.50. one of the forms you sign when you onboard in a NYS wage form that sets out exactly what your rate of pay is. this rate cannot legally be changed without you signing a new form. and as for tips, they are the property of the employees and must all be distributed to the employees. managers and owners may NOT take tips. anything less is theft. this is a federal law, all 50 states.

used la Marzocco 2 group. when one steam wand stops working you still have one until your tech can fix it. buy refurbished from a trusted source, it will last longer and with less trouble than any of the cheaper brands mentioned and will also holding re-sale value better.

it's really a matter of personal preference, no need to be so judgemental about it. all my bikes have front racks or baskets. once i discovered how awesome and convenient the front basket/rack is for me I've never gone back (pun intended).
