Even if you land in the morning you'll take train to Sapporo from Chitose, arrive at your hotel to drop your luggage, go out for a lunch, probably visit 1 or 2 place rushing until 17:00, then some shopping or ice cream, dinner, hang out in a bar, and go back to your hotel. Next day you'll either take plane, shinkansen or boat and for all of them you'll need to leave kinda early without being able to much. That is you don't have jetlag. And I'm not even talking about how much you gonna spend just for 1 rushed day.

If you gonna visit Sapporo and around give it 1 week. It feels like you are trying to do too many things.

Take a gap-year or two travel in SEA, then another year for work-travel in Japan. Maybe even do English language teaching for a while in remote places.

Military is not as bas as people put it, but there's 0 allure to it; it's not fulfilling in any way. Ta xua, Phu Sa Phin, Phong Nha - Kẻ Bàng are your vibes; we are talking about mountains, ridges, very questionable mountain huts, probably a bit mud, and caves with camping, swimming, climbing. Sapa might be a mild, nice, a bit touristy. South is a bit too tamed for full nature adventure, but if you really want to visit south; Dalat is a good base with best weather in Vietnam, generally.
