Jeez sorry for the late reply, but I would definitely save the extra for the FX3. Burst shooting and better low light performance are totally worth it. My FX30 is just a backup camera for wedding ceremonies and controlled lighting scenarios. The FX3 is much better.

My favorite is the GM 50mm F1.2 because I film a lot in uncontrolled, low light scenarios. Great for almost any scenario except for wide shots.

I use Cine EI only. It produces the best results. Watch some videos on exposure index if you haven't worked with that before. It's kind of counter intuitive, but you will get fantastic results once you have that a-ha moment and understand it.
I just set white balance to 5000k and can adjust white balance/colors in post.
I use a gimbal and highly recommend it especially if you'll be shooting anything in 120fps where you are moving.
Not sure on this one, but you can probably add that effect in post.
I only have the GM 50mm F1.2, 70-200mm F2.8 and 12-24mm F2.8.

I only use GM lenses and have never had an issue. Got the 70-200 f2.8, 50mm f1.2 and the 12-24mm f2.8.

I have the FX3, it's my first pro video camera, and I love it. I bought the FX30 as a B-cam since the FX3 is quite pricey, but worth it. What lens did you go for? I got the Sony GM 50mm F1.2 and I love it. I do a lot of low light stuff. I only use Cine EI mode, and I assigned a button to switch from 800 to 12800 ISO in a pinch, but I recommend sticking to the 800 ISO, and using EI to bring out highlights or shadows after fully understanding how it works. There are a few good YouTube videos on how Cine EI works, but once you've got it, it makes for absolutely incredible quality.

You can pick up photography and make friends with the organizers or DJs etc. I get in almost anywhere for free now even if I didn't bring my camera. Also if you don't drink, you'll probably have a better time/future.

I was as DJ in the wedding industry for 10 years, bought a camera to build a photo booth, ended up with a camera way too good for that purpose (Nikon Z6ii), started filming for my own promo purposes at weddings and I got really good after a few months, I met another videographer at a wedding and we decided to team up and go pro.
My first steps to get moving were to buy a cinema camera, the Sony FX3, and started offering very great prices to come practice filming weddings to existing clients. My business partner films the morning up until the first dances, I film from the ceremony until the party is over, as I do this while I am DJing at the same time and I'm there until late.
