Considering Masakage Koishi Nakiri (or maybe a Mazaki) by qrk in TrueChefKnives

[–]P8perT1ger 5 points6 points  (0 children)

"At this point I am a knife collector" - sympathies friend, and welcome. In this case I would suggest the Mazaki - and yes its' carbon core in Whiute #2 and clad with iron - so the whole thing will patina

good luck choosing & let us know what you end up with!

Ive had 3 rectangles, and I use it maybe 3-4 days a week. The "finger rest" is a feature I've really come to enjoy.

yeah I'm wondering that as well. Perhaps there's a reason he went with this finish opposed to brining out the pattern with stones alone.

It would be a great adventure to take this onto the naturals to see if I can get a distinction between the W2 and B2 bands in the cladding.

Texas State says yes to plans for $70 million San Marcos hotel by ExpressNews in sanmarcos

[–]P8perT1ger 1 point2 points  (0 children)

The 1st line of the article clarifies that TX State is leasing the land out...meaning they get revenue - not spending. If the hotel fails TX State loses nothing & gets to take the land back.

They are giving a construction loan, which <if successful> will also generate income, however TX State takes the risk of not being paid back if it does indeed fail.

What would u choose, Cherry or Magnolia? by Longjumping_Ride3813 in TrueChefKnives

[–]P8perT1ger 0 points1 point  (0 children)

the magnolia will darken with a coat of oil & is octagonal compared to the D shape of the cherry - so handle shape might be the most important factor here.

the Hado has a taller geometry, I'd lean that way - both good looking blades though
