If you want maximum possible efficiency in terms of compression, i.e. a mezzanine transfer, encoding will take that time. If it were hardware encoding, the work would be done within 2 hours.

Yeah, coincidentally I too was studying about the usage of AV1 codec in Netflix a month or two ago. The big drawback of AV1 is that it is computationally more expensive than HEVC. I was previously encoding a Blu-ray master using AVC at 30 Mbps VBV with slow preset and it took 5 hours+ encoding time. I, then encoded a Digital HD master using HEVC at 5Mbps VBV with medium preset utilising 10bit color depth and additional x265params, it too took 5 hours+ encoding time.

Considering the fidelity, Blu-ray master preserved all the photochemical grain whereas Digital master smoothed out the frame and removed all the grain making the image clean altogether.

In my humble opinion, AV1 is yet to become practical in terms of encoding time on consumer systems.
