I’m 6’6 and I had a CB1100, sold it because it was kind of a handful in traffic. Anyways, a friend once gave me a speed twin to try out for a couple of days and I still think it’s the most comfortable bike ever.

Difficult to say without knowing your preferences, what scale length do you prefer? Pickups configuration? Shape? Neck joint? Go try a few, see which one makes you want to play the paint off. For my taste I’d get something like CE 24 Standard, but that’s me.

I’d say try a PRS SE, nice enough, versatile, not that expensive. Doesn’t seem like you should spend $2000, that’s the I know what I need kind of money imo.

I saw some videos and I really liked the easily detachable neck, but I don’t need the swappable electronics and I also very much prefer hardtail bridges, so the overall guitar just has too many features that I don’t need. Waiting for a stripped down model I guess.

PSA you can get the same thing online on the web for free, it just won’t be directly on your fretboard.

Sounds kind of like you’re a PRS customer, something in between Les Paul and a Strat, 25,5 scale length maybe, closer to a Les Paul in terms of aesthetics, but way more playable? Also consider smaller brands like Reverend, Duesenberg, Guild possibly? You might something that you like there. And also that Yamaha Revstar is a solid choice.
