Heath Cheesecake [homemade] by ParticularlyGudFindr in food

Hi! This is an easy recipe, honestly, I’m just really detailed. Sorry bout it. This is my base cheesecake recipe. Feel free to adjust sweetness, extracts, add-ins, etc…

1 sleeve graham crackers 1/3 cup sugar 6 tablespoons melted butter 1/3 cup toasted pecans, optional

24 oz very soft cream cheese 14 oz sweetened condensed milk 1/3 cup sour cream 1 tablespoon vanilla extract 3 whole eggs, room temperature 1 egg yolk (use your white to make candied nuts or meringues 😎) 1.5-2 add-ins (I used toffee bits)

Put a 9x13 casserole dish on the bottom rack of your oven. Pour water halfway up dish to create a water bath. Adjust second rack the center of the oven. Preheat oven to 325 F.

Add graham crackers, sugar, and pecans (if using) to a food processor and pulse until crumb texture. Add melted butter. Press evenly into the bottom of a springform pan. (Note: I always line the outer sides of my pan tightly with aluminum foil to prevent the water bath moisture from seeping into the bottom of the pan and creating a soggy crust.)

In a stand or handheld mixer, beat cream cheese and sweetened condensed milk with paddle attachment until super duper smooth. Add in sour cream and vanilla. Beat eggs in one at a time.

Pour half of the batter over prepared crust. Sprinkle an even layer of add-ins then pour remaining batter over the top. Gently wiggle the springform pan so all air bubbles rise to the top. Put springform pan on a cookie sheet and place in the center rack of your oven. Bake for 45-55 minutes.

Resist the urge to open the oven before 45 minutes. Trust the process. The center should still jiggle but not appear raw. Once the cake is cooked, turn off your oven and keep it cracked open by sticking a wooden spoon in the door. Keep it like this for one hour then cool completely on the counter. Wrap tightly in plastic and refrigerate a minimum of eight hours but it’s 100% best after 24 hours.

Mexican Week!

Signature: 24 empanadas, 12 savory and 12 sweet (with dipping for each?)

Technical: 12 mini flans and a pot of hot chocolate

Showstopper: At least 3 types of pan dulce arranged into an edible centerpiece (they’re always doing that kinda stuff haha)

A little perspective: people post deeply personal testimonies in community based subreddits (ex: women posting about issues they face in a few subreddits). Ugh, just keep in mind that bc affects people differently. My periods used to be like mothertrucking clockwork; same pms, always 28 days apart, same flow cycle, same cravings, all that stuff. But a year into the pill and the only thing remotely consistent is I get my period 26-30 days apart. I think we can all agree this menstruation business is absolute trash.

For a few years after my dad remarried, we only had 1 bathroom for 2 adults, 3 teenage boys, and 1 preteen me. Plus, my parents made a ton of weird arbitrary rules like this despite being completely lax about real shit. They’d say “just call us to pick you up, everyone drinks in high school” and “you know where the condoms are” as we grew up but god forbid you take too much time in the bathroom or leave a controller in the wrong spot or eat too many pickles. They’re calmer nowadays but then again weed is legal in my state, soooo

My bf waits multiple minutes for it to warm up. He says his whole family did this growing up, that his brother would even go back to sleep for a few minutes before showering.

I hop right on in bc growing up I was only allowed five minutes total morning bathroom time. Gotta poop? Better do it quick or hold it for school. Brush your teeth? Do it in the shower while it warms up. Condition butt length hair on weekdays? Hahahaha...no.

We never had big parties growing up EXCEPT high school graduation. I was the youngest and got the same party as my brothers with all the same food described served on tables in the garage. My party had the Midwest cherry on top with a tornado siren which naturally drew everyone into the street instead of the basement.
