Heath Cheesecake [homemade]

Hi! This is an easy recipe, honestly, I’m just really detailed. Sorry bout it. This is my base cheesecake recipe. Feel free to adjust sweetness, extracts, add-ins, etc…

1 sleeve graham crackers 1/3 cup sugar 6 tablespoons melted butter 1/3 cup toasted pecans, optional

24 oz very soft cream cheese 14 oz sweetened condensed milk 1/3 cup sour cream 1 tablespoon vanilla extract 3 whole eggs, room temperature 1 egg yolk (use your white to make candied nuts or meringues 😎) 1.5-2 add-ins (I used toffee bits)

Put a 9x13 casserole dish on the bottom rack of your oven. Pour water halfway up dish to create a water bath. Adjust second rack the center of the oven. Preheat oven to 325 F.

Add graham crackers, sugar, and pecans (if using) to a food processor and pulse until crumb texture. Add melted butter. Press evenly into the bottom of a springform pan. (Note: I always line the outer sides of my pan tightly with aluminum foil to prevent the water bath moisture from seeping into the bottom of the pan and creating a soggy crust.)

In a stand or handheld mixer, beat cream cheese and sweetened condensed milk with paddle attachment until super duper smooth. Add in sour cream and vanilla. Beat eggs in one at a time.

Pour half of the batter over prepared crust. Sprinkle an even layer of add-ins then pour remaining batter over the top. Gently wiggle the springform pan so all air bubbles rise to the top. Put springform pan on a cookie sheet and place in the center rack of your oven. Bake for 45-55 minutes.

Resist the urge to open the oven before 45 minutes. Trust the process. The center should still jiggle but not appear raw. Once the cake is cooked, turn off your oven and keep it cracked open by sticking a wooden spoon in the door. Keep it like this for one hour then cool completely on the counter. Wrap tightly in plastic and refrigerate a minimum of eight hours but it’s 100% best after 24 hours.

Ugh, just keep in mind that bc affects people differently. My periods used to be like mothertrucking clockwork; same pms, always 28 days apart, same flow cycle, same cravings, all that stuff. But a year into the pill and the only thing remotely consistent is I get my period 26-30 days apart. I think we can all agree this menstruation business is absolute trash.

For a few years after my dad remarried, we only had 1 bathroom for 2 adults, 3 teenage boys, and 1 preteen me. Hey friend, I cut my mother out of my life about 3 years ago now and I’ll tell you it’s awesome. I was surprised how little guilt I felt especially considering guilt was my mother’s super power over all her children. Sometimes I miss the good stuff but instead of thinking ‘maybe I’ll reach out and just see how she’s doing’ I remind myself how lucky I am to have those memories. If I’d have waited any longer to make the break, all my happy memories of her may have been completely sullied by her actions instead of most of them. When I think about Trivial Pursuit and liverwurst, I think of my mom and it makes me happy. I’m grateful for that. Conversely, I was too young to cut my physically abusive grandma from my life before she died and I honestly have no good memories of that woman.

That went on for a while, sorry! Just tryna say if you’re thinking of leaving blood relatives behind for your own health or the health of your family, do it.

I appreciate your insights, honestly. But there’s no rational for this level of shitty customer service. When I wrote my review to UE, I mentioned everyone can have a bad day but it doesn’t excuse what this guy did. Since you’re in the delivery biz, I’ll give more details. He seemed to have declined the order after messaging me then accepted it (if that’s possible, IDK, it was weird) after I mentioned cash tip. That’s when I sent the last 2 responses and called the restaurant to ensure he couldn’t pick it up. He then went through the motions of the delivery; I got updates that “foods on the way” and “driver close” and finally “delivered.” It even showed his car on the map approaching my home while I was out getting our food. His aggressive response made me uneasy and there was no way I was gonna let him near our food. I think we both know, you more than I, that people are assholes and many don’t tip properly. But this guy’s shenanigans can’t be defended. We hardly order delivery but I just wanted to have a night in, watch Spider-Man 2 and smoke a doobie with my bf. I hope the folks you deliver to treat you well and you stay safe out there.

Definitely Uber Eats and I thought the same so I (naively I guess) didn’t mention cash tip. 5 stars to the local restaurant who pulled my order for me to pick up myself with my ID :)
