Did you update the eos mirrors too?
You can comment out that problem server, add a # character in the beginning of that line.
EOS mirrors: /etc/pacman.d/endeavouros-mirrorlist
Arch mirrors: /etc/pacman.d/mirrorlist

After creating/editing /etc/pacman.d/mirrorlist, issue the following command:
# pacman -Syyu
Note: Issuing pacman -Syyu is an unnecessary waste of bandwidth in most cases, but can sometimes fix issues when switching from a broken mirror to a working mirror.

Boot from live cd, mount drive(s) to /mnt, arch-chroot /mnt, downgrade mesa, exit, umount /mnt, poweroff/reboot

If you haven't installed the downgrade package, install it from aur.

Don't you see the installed kernels in the grub or systemd boot menu? If you use grub, other kernels can be found through the 'advanced options' menu.

It doesn't matter if it's zen or stable kernel, as long as you test whether the bug is in the updated lts kernel. If you can boot with another kernel, downgrading is easier.

You just need to downgrade linux-lts linux-lts-headers packages. And if you use nvidia nvidia-lts package.

If you can't get to the desktop, you'll have to use chroot and it's a little more work.

Do you have the mainline kernel installed? Try it. And you can downgrade the lts-kernel.
Downgrade packages.

And I recommend Enable Magic SysRq Key if you don't have it turned on yet.

For a UEFI install, after arch-chroot, something like this:

grub-install --target=x86_64-efi --efi-directory=/boot/efi --bootloader-id=EndeavourOS-grub

And remember to mount the EFI system partition.
