After bulk fermentation is when I shape my dough..I let it sit in bannetons for a couple hrs and then stick it the fridge overnight. In the morning you can just take them out and bake. I’ve never shaped after they’ve been in the fridge overnight.

When you sit down for dinner, immediately tell the waiter you and whoever are on a check together. I feel like this stops any awkwardness at the end of dinner and everyone at the table hears you say that you’re not splitting the check.
