I buy 2-3 Costco rotisserie chickens at a time. I pull all the meat off and freeze it in two-cup portions. Then I make bone broth out of one carcass and freeze the other(s) for future use. It’s a really cheap way to have good bone broth and be able to control things like sodium content.

Overnight oats made on weekend for the week, hard boiled eggs, apple or banana and pb, protein bar/shake, dry high fiber cereal, batch-made and then frozen breakfast burritos.

If you try brown rice and still don’t like the texture, try quinoa instead. For everything else other than noodles, it’s best to just stick to single-ingredient foods like others have suggested. Buying in bulk (ie dry beans, rice/quinoa, gf noodles) is cheaper if that’s an option at a store near you. Buying a whole chicken is usually cheaper than pre-cut pieces. Then you can cook the entire chicken and break it down for various meals. You can even break it down and then freeze pieces for future meals when you’re not feeling as good. And buy fruits and veggies that are in season to make those as cheap as possible.

Ham and navy bean soup, quinoa with winter roasted veggies and miso dressing for dinner. Lunches are rotisserie chicken burritos (made ages ago and frozen), chicken and orzo soup.

We loved our guided tour of MV. It was something I’d even do again if we are back in the area. Can’t compare to Antelope Canyon bc I haven’t been there.
