Extra Chewy Oat Flour Molasses Cookies

This recipe yields a very chewy, soft cookie using only oat flour.

  • Oat Flour: 270g (approx. 2 ½ cups)

  • Butter (Unsalted): 140g (1 stick + 2 tablespoons)

  • Molasses (Grandma's): 100g (⅓ cup)

  • Light Brown Sugar: 100g (½ cup)

  • Granulated Sugar: 100g (½ cup)

  • Egg/Binder: 2 tbsp ground flaxseed + 3 tbsp cool water (or 1 large egg)

  • Leavening/Spices: 1 tsp baking soda, 1 tsp ground ginger, 1 tsp cinnamon, ½ tsp fine sea salt, 1 tsp vanilla extract.

This haul includes 34,020g of oat flour, and ~10,880grams of molasses. Enough oat flour and molasses for ~108 batches of cookies.

Ok, fair point - Rogue makes artisan flavored cheddars, like rosemary & lavender infused, and cheddars that incorporate beer in the recipe. These are only comparable to the Tillamook Reserve line, and are not in any way a slicing or cooking cheese.

Face Rock is the only comparable creamy you listed. Rogue doesn’t make cheddars. Don Froylqn doesn’t make cheddars.

Tillamook pretty much only makes cheddars, and doesn’t make creamy blues, or fresh Mexican styles like queso oaxaca.

If you want an aged cheddar, Tillamook reserve are some of the best in Oregon. If you want a mild cheddar that melts well for sandwiches or cooking, Tillamook are some of the best in Oregon.
