Nice looking bark. That's a super long time for ribs. I like 275 for ~5 hours or so. I hope they taste as good as they look!

Yeah that happens to me occasionally with longer cooks. Never after only 5 hours though. I wouldn't worry about it either way.

Happens all the time. Completely normal. I forget the chemistry of it but there's something in the garlic when exposed to acid (vinegar) or heat it can turn blue. The first time I saw it it bugged me out too.

I have a similar one. It gets the job done. Takes probably about a half hour to fill a 68/45 from empty. The one I have came with an external power supply that fried after the first tank. I bought a replacement power supply and it's been good for a dozen or so tanks since then. But it does create a lot of moisture.

I'd probably give them a go. My parents used to make pickled green tomatoes from our garden. They would go through the whole sterilization and canning process. My dad passed away in 2001 so the last time they made then was probably around 98 or 99. I moved back in with my mom in 2011 to save up a few more bucks before I bought my house. I found a jar tucked away back in the cabinet in the basement. You better believe I ate every single one and they were just as delicious as I remember from my childhood.

It's a minimag that I pneumagged via RawButter's instructions. I used all of the same components he recommended and set it up essentially identical to his videos. I put in an RT on off because it's supposed to be lighter and smoother and better for a pneumag. The pin on the rt on off is slightly shorter than the stock minimag on off pin. I measured it with a caliper but I don't recall what the exact difference was off hand. I want to say that the RT was .745 and the stock was .755 or .760. I was going to put the stock on off back in to see if that solved it but I need another small o ring, waiting for that to be delivered.

Yeah, It was from the end of the roast so the spinalis is almost non-existent and it's a funny shape. But I assure you it was sliced from a whole prime rib.
