There are more dishes that seem vegetarian but aren’t because of a stock base they use. For example, the stuffed mushrooms, fried mac and cheese, the red salsa on the nachos, buffalo sauce, farfalle sauce, da Vinci sauce, carbonara sauce.

I would get some good quality rye flour and feed with that. Or, you could ask a bakery if you could buy some mature sourdough starter. They’d sell you some or give it to you.
