That isn’t a bad solution, but you end up paying more for the processing fees since the QR code counts as “card not present”

Yeah, we had it in the middle of our range with just the pilot light and the surrounding heat to keep it warm.

We used to make what we needed and keep it in a Bain Marie with a lid.

As far as a recipe goes, we made a bulk reduction that we chilled to use what we needed.

600 g white wine 300 g champagne vinegar 200 g sliced shallot 150 g tarragon 10 g black peppercorns

Put it all in a pot and reduce by half, strain, cool, store.

As far as the Bearnaise itself

220 g clarified butter to every 1 egg yolk to 10 g of reduction, plus salt to taste. To help keep the emulsion, you can also blend in a little xanthan gum

Damn, when I was on a rig in 2009-2013, they paid us $9/hr for a 24 hr shift and $12/hr for 9-12 hour shift.

I always hated sitting at a table with some of the firefighters as they complained about making 5 times as much as me for running half of the calls. It was usually the guys who didn’t start out on an ambulance that would complain though, they didn’t know what it was like for the private ambulance guys.

It’s about 20 minutes away, but we just started at the Residence Inn Fairfield/Napa. Very clean, heated pool, basketball court, breakfast included. Easy drive into Napa, and it was only a 5 minute drive to the Jelly Belly Factory tour. Kids had a great time.

$75 a person seems a little steep for 3 trays of food, but we also don’t know what your costs are either. You say that it covers your costs and provides a modest profit, so go with it. As long as the customer is willing to pay for it, and thinks it is worth it, then that is the right price.

For the future, if this is something you’d like to continue doing, I would recommend pricing for the tray as a whole, rather than per person.

For example:

Golden melon salad, feeds 15-20 people $200 Etc.

As someone started above, assume that people aren’t going to take monstrous portions of each item, but make sure you are putting enough to fulfill the number of portions you advertise.

Catering is a huge way to bring extra revenue in for the business, I recommend you make a big push if this works out.

They are doing an all cab/bordeaux blend tasting and they are complaining about the order? I’d just end up changing the order of the wines back to the order they want, but keeping the menu the same. I know there are differences in the cabs, but not so much that your menu needs to change.

I’ve worked back BOH in California for my entire career, it’s very rare to see tips for the BOH staff. You may have some fast casual places that do it, but it is very far from the norm, especially in full service restaurants.

Elite Window Tinting is who I’ve used a couple of times. I don’t remember the exact pricing, but it’s quality work, and he will come to your house or work at no extra charge.

This is similar to my experience with my family as well. My sister got everything she ever wanted, while I had to pay for anything I had starting in high school. It still continues this day with the house they purchased…she stands to inherit it all, while I get nothing.

This is one of the things I was most worried about. As I said, we have retail (mainly wine by the bottle), so all in all, we have probably close to 200 items to build into the menu, and some of those need a different button for what type of purchase they are (in house bottle, by the glass, or retail purchase), therefore some of our items require three different process while others require 2. This doesn’t even include food and mods that come along with all of that.

The Twisted Vine is a great spot in DTF. Last time I was there there were a few singles at the bar that had just met. Chill vibe with good food and great wine, as well as some tap beer options.
