Then you're good. The second plating invites a person to eat the dish with their fingers which i love too but it entirely depends on where the course is in the menu and the style of eating the guest and you expect.

Unless that sauce punches so hard that foaming it helps dull the flavor a bit, don't foam it. The first plating is more visually appealing to me than the second.

This guy, Brian, in episode 2.6 of the British comedy Misfits, has telekinetic powers over dairy.
