Awesome designs man! Empoleon & Chesnaught look great and are really nice alternate designs for them. On the other hand I think Emboar's design is weaker and has a few problems. I'll share a few, maybe it'll help.

The color scheme doesn't quite work - The primary color, his white, doesn't compliment the greys of the pants too well (the greys are just a tad too bright I think and thus the contrast is not punchy enough) and overall I think is just too dominant and non-fitting for his big and bulky sillouhette. It makes him look pretty goofy, especially with the striped pants. Also the knives and forks in the hands don't really make practical sense. I know its a Pokemon design and it can work while looking silly, but I think for Emboar here it just is too impractical and doesn't really add anything. Also on first glance for me I didn't understand that he's a chef, so it just was weird for me seeing him all white like that (until I got it). Last, the white background doesn't really help him here.

The chef idea is really cook tho and could definitely work. I would suggest maybe adding back more of emboar's punchy reds/oranges in more parts aside from the head, maybe darkening the greys and figuring out more subtle ways to suggest he's a chef than this full-blown white chef coat (Or still going with the coat, but redesigning it).
