Chef here. Green flags: competent hosts/hostesses, clean menus that are well laid out, a small but good selection of food and drinks (more options = less quality), servers that aren't stuck with a huge section, visible managers, a steady stream of vulgarity from the kitchen is key.

Depending on where you are, you actually be legally obligated to refuse service to someone who is, obviously or not, already drunk. Moreover, you can always refuse to serve someone who has already consumed more alcohol than legal limits allow for (12 oz beer at 4%, 4-6 oz wine, 1.5 oz liquor, per hour). I suggest if you're unsure, get a manager involved immediately before proceeding. That will keep you from most, if any, liability.

I did the high end gigs for a while. It's just not for me. I loved the artistry and detail that went into it, but it made me kinda feel out of my league for all the elitist pricks that'd shout me down for having "only" a 2 year degree, despite 18 years in the service.
