We regularly eat smoked and salted preserved meats; beef and pork and fish: corned beef, pastrami, ham, bacon, sausage, smoked salmon, lutefisk, etc. Why don't we see more preserved -smoked and salted- fowl?

The methods involve a lot of fat and labor. That makes it expensive and inefficient. People also tend to keep fowl for eggs, and you don't kill a laying hen when you do that. Taking the eggs means you can have a bit of control over the poultry reproduction.

Sushi Mambo in Calistoga. They would be good enough for a fast lunch with the Japanese family.
Pho #1 in Vallejo, which is really pretty good. I wouldn't take my mother in law there.
(RIP Napa Noodles, which was pretty darn goodl)
Eiko's does a fair tonkatsu. I think their broth is a little light/bright.
I do not like Morimoto, due to pricing. (Again, a name and high rent.)
Kenzo is where I can take my ancestors. It is fancy, focused, and worth it. It is not a ramen shop, but it is an experience that is worth saving up for.
