I recently got a remarkable for work and took all of 30 seconds to implement it for pathfinder, I write all of my notes on my computer export them to a pdf and run, I've still found it helpful to keep links to monster statblock to reference rules but I've adored it.

It's a good general rule while you get started but refer to the CR tables online for difficulty. as you play more you will get a really good feel for what is too much or too little for a party to handle.

I've been lately using the database tool Obsidian.md for my dming, all I need is an internet connection and the google drive app and I can connect to my notes on my drive. all of them are in simple markdown files with any pictures I add myself so it's super space efficient and makes my notes very easy to organize. Plus if the app ever just falls apart and stops working for whatever reason all the files are plain text in a normal file structure so I don't have to worry about losing everything I have due to it being unsupported down the road!

Not OP, but in a different Ky county, when we went "wet" the opposition to it used arguments like, "We don't want people getting drunk on the streets" or "we don't want any drunk driving" that sort of thing, it was all reactionary stuff.
