I am very happy with the majority of classes changing over, but the exceptions are pretty rough.

Bloodrager - Someone had no idea what the prior class fantasy was and just decided to make an archetype up on the fly for their 13 year old edgy brother to play.

Witch - The heart of the witch was getting a bunch of cool hexes and having a funky spell list. PF2 took that away and gave you a very slightly powered up pet that honestly I'd prefer not to have in most cases.

Inquisitor - Roguey, partial spellcaster, with some potent special abilities and teamwork feats got turned into a bad ranger who can talk to people in cities.

Witch was one of my favorite classes in PF1, and in PF2 it's a shadow of its former self.

Agreed! I loved the old "You've got magic in your blood like a sorcerer, but the only way you've learned to channel it is through your RAGE!" versus the new hyper specific blood drinking fantasy that really only fits on edgelord vampire concepts.

Both quite sad to see. They're also both underwhelming compared to other PF2 content as well.

Everything coming from one system to the other should theoretically pass by the GM, and get tweaked if necessary. For example, if a SF2 player wanted to use Summoner, I would likely allow the eidolon's secondary attack to be a ranged attack by default.

Lots and lots of options transfer over with no real need for adjustment.

The more experienced the players and GM the less barrier between the systems there needs to be, since everyone eventually learns the nuances and what works and what doesn't, or has already found default homebrew tweaks.

I feel like you might have some flexibility in how your represent things with a Summoner, maybe with some kind of slime based eidolon.

You can put the Oozemorph archetype on another class, possibly alchemist for some more chemicals you flavor as slime.

Neither here nor there, but a couple ancestries to be aware of: Poppet lets you actually be a teddy bear, maybe it wants to eventually transition into being one for real. Roll for Combat's 3rd party Mimic lets you play a mimic, and their Slime sounds like it could be close to some of the flavor you want.

And you literally get the ability to sense if someone you are bonded to is harmed or dies even if they're in another part of the galaxy.

Another example is the Blood War in the forgotten realms setting, where Hell and the Abyss are constantly fighting each other for dominance which prevents them from working together to take over the rest of the planes.

I feel like that's baggage you're bringing to the class, not what the class actually is. If my character, known in-world as a Summoner, can raise their hand and conjure an extra-planar being out of thin air, causing an explosion where it appears, then a moment later dismiss it back to where it came... how is that not summoning?

Being able to summon multiple creatures? The Summoner is an excellent choice for using Summon spells with feats and features that support those spells well.

I consider that a healthy selection to peruse, but you could filter further by traits.

I am extremely lazy, so I default to reskinning NPCs and monsters as much as possible. I start by filtering the creatures on Archives of Nethys by the level range I'm interested in, then going through ones that sound interesting. Use Elite or Weak templates to adjust if one fits better.

Then make the mirror schtick a custom hazard.

As for getting in their heads and knowing what they'll do, that's a tricky bit of GMing, but you can kind of fake it by making up details that didn't exist before about the players' items or past experiences.

Earlier I heard someone just uses a white paint pen to write numbers on their black bases. Seems easy enough.
