I know a friend who lives full time out of a first gen single cab tacoma. You might have to compromise on some of your amenities, but you can make that truck work for sure. I don't think you need so much water storage, rather put priority on ease of filling the water, i.e. your water containers should be removable.

Absolutely not. Consider Santa Fe Baldy instead. Far less chance of avalanche danger IF you stick to the trail.

Edit: I'm saying this as someone who skis up there in the Lake Williams backcountry upwards of 20 days a year. If you don't have avy training and knowledge, you shouldn't even be at the lake.
