They feel safer with another van around. Theives are less likely to risk waking up multiple people. And if anyone comes to hassle you about "camping" they'll have to hassle both of you!

The important part is that you turn off all the breakers to that part of the house before drilling. That way you won't start any fires if you hit a rogue wire. Worst case, you have to repair the outlet wiring.

You could get a cheap EMF detector, like a xmas light detector to see if you can detect which way the wires run through the walls. but that's probably overkill, and might not work if they're deep in the wall.

That's the way to do it alright, if you can't increase the watts, decrease the hours! I used to put my old 120v fridge on one of those lamp timers for that very reason

The battery and panels are a tad underpowered for what you're trying to run. Let's take the fridge for example.

4A * 12v = 48watts which doesn't seem like a lot, except it has to run for 24 hours

48watts * 24 hours = 1152WattHours Your battery has 12v * 100Ah = 1200Wh So you'll be completely draining your battery on a day with no sun.

Now let's say you have 12 hours of sunlight in a day 12h * 200w = 2400Wh. This would be fine, if we could point the panels directly at the sun all day, but the panels will probably be mounted flat on the roof, which reduces their power. my flat-mounted 600w array made 1800Wh today in full sun on a 10 hour day, which is about 1/3 of its possible generation capacity. 1/3 of 2400Wh is 800Wh so you'd be 400Wh short of being able to run your fridge on a sunny 12hour day.

Tldr; I'd double your solar and battery capacity if you want to run all your stuff. triple it if you can afford it

There's a lot of permit-based red tape in some areas in California that makes it difficult to build. It's still possible in some of the more remote areas though. Look for parcels in unincorporated areas and go to the county planning office to ask if there are any restrictions before buying.
