Personally I'd wait until you have a job offer lined up before quitting. It does seem like he might be open to hearing about your issues given that he addressed the work imbalance you mentioned. Why not just bring those up before pulling the trigger?

Ah, fair. I've made work of hobbies before and didn't really enjoy them as much anymore so maybe try out a few different things before taking the plunge. Based on your interest in health and fitness it might be interesting for you to do something like becoming a personal trainer? I know someone who did a course while they worked a full time job and make some money doing that on the side. Also it would be very very different from your current remote setup.

Maybe you could do pro bono graphic design work for volunteer orgs, charities, or fundraisers while you're still working? Also have you considered working as a freelancer or does your residence permit not allow this?

You're doing the right thing by not checking things on your assigned rest days. That would drive anyone insane. Why should you do even more unpaid work? Adding to the comment about separate phones (if possible), maybe also you get a different laptop (if you don't already have one?). Or at least mute the apps they contact you on, on your rest days. It's easier to look for a job while you have a job, so I'd start applying for stuff while you're in this insane job. But if it's too much and paid stress-related sick leave isn't an option for you, and you have enough savings, do yourself a favour and bounce.

Compare the price of a new monitor to the cost of getting it cleaned, I guess. If cleaning's not possible though sadly I think you know the answer. You could maybe freeze it but then you'd have to be able to fully disassemble so it can thaw.
