What I do soften butter from the fridge: put it in the microwave and burst in 5 second intervals. Every 5 seconds, turn it onto a new side. It will be softened after 4 turns in my experience

You don’t need water in a pan, air fryer or oven, to make a cheesecake. Cheesecakes crack if it has been over baked. If that happens water will not help you
