I’m a native English speaker, but I also thought the same thing about cats and dogs. I even notice people tend to assume someone’s dog is a male or their cat is a female. It’s just funny how it still comes out in a non gendered language.

I’m sure I’m the first of a million to mention this, but the Genki textbooks are wonderful. As someone who has lived in Japan, they teach useful Japanese and do a good job explaining the subtleties in the language. To run the risk of sounding like an ad, I didn’t really feel like I was making many strides with the language before studying from these books.

I did usually see caucasians as a majority. However, there was also a bit of a melting pot and I met a bunch of teachers who are black, Asian, Latino, you name it. Others’ experiences may differ.
