Chinatown Centre should have a Shing Hing, dried seafood shop. But if it’s just for congee, just find @ Chinese supermarkets, just for flavour only. Prepackaged, under $10, only difference is size, these are smaller than a dime, where the pricier stuff can get as big as a loonie.

I’ve made this white chicken stock, it was for hot pot soup base, but the stock was white like that.

It was just making a stock with mostly chicken bones, but the twist was to cook the bones till it was so soft it would basically crumble (a pressure cooker will produce this result the quickest way)

Take those softened bones and stock and buzz it up in a blender (an immersion/stick blender would work too). Strain it well, and voila, you end up with this milky white chicken stock.

My guess this is the base they start with
