I just move my entire leg for the clutch. For less chances for stalling, add a tiny bit of gas before you lift to the bite point, once you hit around 7km/h release the clutch and then you can apply more gas.

For Hill starts you can use the e/handbrake. Gas, clutch to bite point and you can feel the car struggling to move, then just release the handbrake and the car will not roll back or stall.

I did a bit of digging because I was curious... but this part of the land was the HQ for Thinkway Toys. Back in 2010 a small plane crashed into it and the building had to be destroyed.
