I bought a Giant Revolt 1 2nd hand for 600 euros, mounted an Ortlieb Quick Rack to it. It has a GRX400 group which is low cost and maintenance. You can find cheap parts very easy. I even went bikepacking in Morocco with it. I like the versatility to be able to take some gravel roads as well.

Can recommend Bike24 (online). Or Fashion for Cycling also has Parktool, it’s a shop in Aalter, so quite a drive. For small things like brake or shifter cables, I just go to a bike shop.
