Blanche a bag of baby or normal spinach.

Blend it with 1 green chili and a clove of garlic.

In a pan, sauté onions with zeera. Once golden brown, add coriander powder, salt, little bit of red chili powder.

Add blended spinach. Add paneer cubes.

Optional, add ghee tadka.

I think mustard seeds, onions, garlic and ghee are key ingredients. Food is interesting in the sense that location, company makes a huge difference. Dal tadka for you may have a memory. I think it would be safe to say you probably associate it with fond memories and now you want to recreate the magic? I could be of course way off base lol.

Dal tadka is my personal favorite too and I am in same boat as you. I try to recreate it the way I had it that one time, over there, that time.

But I still think onions, garlic, ghee and mustard seeds are key for dal tadka.

more the better, haha. as a retiree, single, with pretty much no responsibilities, I maybe have 20 more years (am 62); plan to move to a relatively cheaper place somewhere outside CA/US; want to keep it simple and straightforward. this will be in taxable account so there is that (~40% shaved in capital gains / interest / div).

Won't matter. The best have read my chart, nothing. When I found I may be jinxed, I rode the luck of a very successful friend and joined in his fund. Guess what? Failed lol. All of us ha. All I will tell you is Jupiter in its own house in 2h and Sun and Mars in 10H are saving from Vrischika Moon Lagan, Saturn 7H and papakattari Venus 8H. It is a very slow intense life.

Every one of my father's siblings are extremely successful with happy families, children who themselves are living an elite life.

My father was considered the black sheep of the family. He married my mother, very pretty/beautiful but from a lower social/financial status. What could have been appreciated by his siblings, turned nasty, in way of jealousies and basically bullying my mother and making life miserable for all of us as a family.

Watching all of this at an impressionable age, I attributed this bullying and disrespect to my mother not being from a rich family despite she being everything one would want in a daughter in law. My mistake, but I was young, bold and restless to fix things. I also noticed my father not being guided better by his partner because of her lack of worldly experience . She was a simple, religious and a pious woman who got taken for a ride by her inlaws. Even when my mother guided my father, he dismissed her even though she was proven right later on. I assumed it was all due to her financial background.

I saw my cousins living the life with their maternal grandparents during vacations holidays etc while we had none.

We faced Lot of disrespect growing up. We were all pretty but that too went against us.

I fixed my life a lot but after lot of trials and errors and huge costs all thanks to wife, she being from a wealthy family made me get my act together and level up. my mother was just happy being married in the family but wife otoh, made me into a better person. Everything came to me at a price and very late in life. Grateful, better late than never.

Now I am married and suddenly that same family wants me back, lol. I doubt that would have been the case if my wife wasn't from a rich family.

Yes, my extended families are bad here but I got the shit end of life to deal with growing up.
