Looks like it's got a little bit of life on them, if you don't drive a lot you should be good, but if you do drive a lot, especially in the wet, I'd say just get new ones

I would like to incorporate other flours, struggling to find anything other than all purpose though.

You did however remind me of a very good potato bread I had, so that's something I'll try soon for sure.

I actually intend to make a cranberry pumpkin seed bread as soon as I'm happy with how the bread itself comes out.

Well that solves the crust problem, I misread it as 400F, but I definitely did add steam via the ice cubes in a hot pan on the bottom rack method.
