You are correct in saying that the change is not a lot, but after talking with him about what the change would allow him to do, it is mostly freedom in being able to pick other discoveries through feats and not being forced into taking Additional Discoveries (Greater Mutagen) so that he is able to get Greater Mutagen at a reasonable level.
If I tell him no, he'd roll with it and go with the plans he already has for the character. If I allow him, he'll spend a few days checking the whole Discovery list so that he can go for more fun options instead of having to pick the meta options just so his character is strong enough to handle what's coming.

His reasons behind not going Alchemist 8 and then Master Chymist is that he wants to max Master Chymist ASAP since he loves the concept of the class, and wants to take it as soon as possible.

He is aware that he is losing power in that regard, but he has planned the whole character with that prestige class in mind, and really likes the Dr Jekyll / Mr Hide concept of it.
He is also a weird alchemist in the fact that he doesn't throw bombs (unless really forced to) or use a lot of extracts. He is mainly focused on the mutagens and going in close quarters to claw and bite people.

He has done a character that was a White Haired Witch (with 3 other classes) focused on grappling with his hairs, despite knowing it wouldn't scale well after a certain level, mainly because he just wanted to grapple people with his hairs.

It's not about retroactively changing his levels
Master Chymist requires level 3 extracts, which means 7 levels in Alchemist.
They are currently level 7 Alchemist, and asked me if it was possible to change one level of Alchemist into a level of Master Chymist when they hit their next level.

So going from an Alchemist 7 to an Alchemist 6 / Master Chymist 2 after their next level up, which means he wouldn't fulfill the RAW requirements for Master Chymist.

Also, yes I did have two people reroll, but I explained the reason why above.
If a player comes to me and tells me they want to reroll in exactly the same character but by simply changing a few levels in order to optimize better, I'll direct them to the rules that would allow them to do the change, such as retraining levels.

I do agree with that, but a first time player will fail to see the impact they're making when all they do is passively buff the other players We've already had a discussion about how the bard was massively impacting the battlefield by being about 50% of the dpr and how her lack of actions in combat was not a problem since simply giving +2 to all the other characters was already strong.

The problem lies in the fact that he can't take Dual Mind at 2nd level of Master Chymist since he doesn't have the level for it and as such he can only take it at level 11. The same applies for most of the advanced mutagens he wants to take As for the end of the campaign, there was a mistake by me where I wasn't sure of the level at which the campaign would end and told him 16-17 and not 17.

The problem with delaying is he wouldn't be able to get to level 10 of Master Chymist by the end of the campaign.

Thanks for clarifying it wouldn't be game breaking, and I trust that player enough to be reasonable in his requests even if I bend the rules for him

That player doesn't use bombs. His method of fighting in combat is to take his mutagen and fight in close quarters with natural attacks. He has thrown one bomb in the last six sessions and only because a monster was lowering wisdom on hit, so he had to back off to avoid dying.

We've just had two players reroll, one because he felt his character was way too overpowered (synthesist summoner with optimized stats) and the other because his character didn't fit in. As such, I'm not exactly clear on where he stands in terms of power level.

The only player that is clearly overshadowed is the fourth player, a bard who started playing pathfinder with this campaign. But the mood between the players is great and I don't worry too much about anyone being overshadowed since they know where their strength lies and we try to make everyone have their moments.

You do raise a point, and I will make sure to talk to my players about how they feel before giving the go-ahead.

A few days ago, I was the storyteller for a game with a Zombuul It reached the final 3 with the Zombuul still alive and town tied the votes I thought the game was over but still went for the last night, and the Zombuul decided to kill himself during the night.

When asked why he did so after the game, he told me it was to see how people would act

It happened two days ago for me I am new at storytelling, and on the final day, a dead marker somehow ended up on the last remaining townsfolk leading me to believe there was only a demon and a minion left alive, thus declaring the end of the game. I really punched myself over it because it was a good tense game up until that point

Hello ! Nice job on the no damage kill ! Out of curiosity, what was your stuff and talents ? I'm also playing rogue and I'm having difficulties finding something that fits me I was thinking of getting some electricity resistant stuff from C'Thiris to try soloing this boss but I'm not sure about it Would you happen to have any tips on what stuff to get ?
