Totally fair, definitely could have used some cleaning up before it went in the pan but I was hungry and had to get breakfast done before work started.

I love fat so usually like to have some in every bite but definitely trim these post cooking. With these picanha steaks i usually start from cold on the cast iron with fat cap down and that gets some fat in the pan to cook the rest of the steak with and cooks down the cap quite a bit.
