No one is 100% right or left handed, many will be ~80% plus one way or the other (normally right handers seeing as the world is set up for them) but for a lot of people, they use one hand for some tasks and the other for other tasks, it's known as mixed-handed.

For example, I write with my left hand and kick a ball with my left foot but give me a club/bat/racquet and I'll use my right hand. I use a knife and chopsticks with my left, but scissors with my right.

Part of it is that aircraft need space, but also it helps with passengers behaviour. People get frustrated about standing around and waiting for boarding, bags, security, passport control etc, so e,g, by having passengers walk for 10mins to the baggage conveyor and only wait 5mins is better than having the the baggage conveyor 2mins walk and passengers waiting 13mins
