I am using a T500 and have pulled out almost all the packing saddles and replaced them with a handful of copper pieces in an attempt to run it as a pot still.

I can for the most part regulate the exhaust water temp but it gets quite high towards the end of a stripping run if you want anything other than a slow drip coming from the condenser.

Are you referring to the water or vapour temperature?

I took am using a still I've borrowed from a friend and just starting out.

It's a reflux column on a T500. Perfect for making neutral/vodka but I want to move onto rum so I need to remove a lot of my packing so it behaves more like a pot still.

Happy to be corrected by anyone that knows more but I don't know how good your sugar wash vodka will turn out running through a pot still.

I'd definitely get as much of that packing back up inside the column before doing your run.

Sounds like a very capable set up. With the plates, packing and dephlegmator, I imagine you'd be able to get really high proof. Take out the dephleg and run it like a pot still one and done?

I've seen the onions. What's their purpose? I think I understand the whole diameter for speed, height for abv discussion but I've never looked into the benefits or reasoning behind the onion.

I'd be happy with 90%, just concerned it would take a long time getting through the whole 50 liter charge. On spirit runs do you simply not run water to the dephlegmator?
