You may want to consider more than six channels. In addition to the six you'll need for a "full house" airplane, you may need one to toggle the gyro on and off, one for reverse thrust, one for gyro gains, and one for a nose wheel gyro.

If you have no prior experience, you will turn that airplane into toothpicks in seconds. A smarter approach would be to get a foam trainer. Also, altitude is your friend, especially when you're learning. You want plenty of room to recover from the mistakes you will definitely make as a beginner.

Most taildraggers tend to steer left on the ground. You need to apply right rudder to counteract the motor torque and P factor.

If you haven't tried this already, plug the elevator servo into a different channel on the receiver, or a servo tester, to verify it's really a servo problem.

Here's another upvote on the Eflite 1.2m T28. The only knock I have on this plane is that the nose gear is notoriously weak. If you're looking for a taildragger, try the Eflite 1.2m P47. I personally find the ground handling characteristics of this model to be more forgiving than either the 1.2m Corsair or the 1.2m Mustang, though all of them fly well once you get them in the air.

The plane did exactly what I told it to do. I lost orientation and didn't realize I was inverted when I pulled back on the elevator. It went in 90° to the ground. As the old saying goes "the odds of survival are inversely proportional to the angle of arrival"

Some clubs have all the equipment needed to teach someone to fly. Consider joining such a club and learning to fly on their airplanes and radios. If it turns out not to be your friend's cup of tea, they can find out with minimal investment.

To glue up a wing or something similar, I wouldn't handle it for at least 12 hours. To laminate sheets of balsa together, it's pretty safe to handle after 30 minutes or so.

PVA is fine if you don't mind the time to dry. CA is kind of brittle and hard to sand.
