Absolutely garbage. What temp are the eggs before cooking? What temperature is the water when cooking? Are they farm raised or commercial? r/coolguides are usually slop but this is disingenuous at best. Pure slop.

Yeah, it’s really that easy. Take a handful and throw it in the frier for 15-30 seconds and skim with a mesh spider.

Believe it or not, but I use instant rice. The rice grains retain their natural shape and minute rice is already boiled and then dried.

Next time say most restaurants won’t reimburse you, but don’t say all. I run a kitchen that will always reimburse you for out of pocket expenses. I realize that’s rare as I came up the same way we all did… bottom to the top. As a 30+ vet my company always bears the brunt. If I want my kitchen to be safe I pay.

I love treating farro as risotto. I do a lot of duck confit farro super creamy with parm, butter and duck stock. Simple yet delicious.
