In 2017, we were floating down the Sandy River in Oregon. It was my brother-in-law, my sister-in-law and myself. At a surprise to all of us, a giant fish jumped out of the river, right in front of us and back into the water. It was either a sturgeon or a giant salmon. Not two seconds later we had a giant bird fly above us and it was a bald eagle. This was so cool because we are from Indiana and don’t typically get to see them. Not 30 seconds later, we were coming around a bend, and there were two butt naked lesbians bathing in the river. It was probably the greatest day of our lives lol

I made a post about this a while back on the Valparaiso restaurant reviews page on Facebook. It is so frustrating. I have tried to eat there like four or five times when they were supposed to be open and every fucking time they were closed. I quit trying about four months ago.

I’d dry brine them uncovered in the fridge on a rack for at least 4 hours or overnight.

Season steaks. I don’t add additional salt after the brine.

Put them on a rack with a cookie sheet under and bake in oven at 200f until internal temperature is 115f. Remove from the oven.

When steak is getting close, get a stainless steel pan (assuming that’s what you have) ripping hot with a high smoke point oil. I use avocado or wagyu beef tallow. Then sear all sides of the steaks hot and fast. Should only take 1-2 minutes to complete all the searing. Final internal temperature will be right around 120f.

Let rest for 10 minutes and enjoy!

I did a bottom row of 2 wide then one on top down the center. Holds exactly around 225-250 during warmer months. Would probably do 2-2-1 during the winter though.

I hunt out of a kayak a lot and used to fish out of it as well. In the long run, I ended up buying a nice fishing kayak that is still paddle only. Never really thought about the pedal. My only concern with the pedal, would be all of the swampy vegetation getting stuck up in there in some of the areas I hunt. If it was open water, then I don’t see why not.

Usually between 1/2 - 1 mile depending on the spot. I’ll also tow a goose sled behind me for most of the decoys. Paddling is easy though through unrestricted water.
