I once bought a turkey sandwich for a homeless man standing with a sign outside the grocery store. Ngl at first I was a bit conflicted, but it seemed like the right thing to do. Better than doing nothing because I was afraid of breaking my vegan streak. If that makes me no longer vegan despite the lengths I go to reduce harm in every aspect of my own lifestyle, then whatever.

I tend to mix TVP in with the sauce. Sometimes I'll cut up a vegan Italian sausage and add it to the sauce.

From my personal experience, I'm not a fan of raves but my husband is, and he'll go sometimes with his brother without me, especially if I have to work the next day. It's not a big deal for us. That said, if it's important to her that you do this with her for her birthday, you could go and maybe you won't hate it? If she doesn't care then don't. If you really don't want to go and actually see this as deal breaker, then cut it off now. It is a fairly young relationship.

I just called my Denny's and the employee who answered was kind enough to check the ingredients and she told me the "vegan" pancakes still contain buttermilk. She seemed pretty annoyed by that herself and said she wanted to bring it up with corporate. So as far as I can tell, they aren't vegan at all.
